COCONUT GINGER SMOOTHIE
You can throw just about anything in a smoothie to enhance its flavor such as honey, tofu, jams, any combination of fruits, peanut butter, juices, etc., but keep in mind it will effect the nutritional values.
1/4 cups apple juice
1 pinch coconut, grated or. . . 1 tablespoon coconut milk *
1/2 banana
1/4 teaspoons ginger root fresh, peeled, grated
1/2 cups crushed ice or 2 small ice cubes
Can be made from fresh or dried coconut or purchased bottled. Do not use the canned coconut mix for mixed drinks as it is very sweet and different.
If using fresh coconut, cut coconut meat into 1ʺ pieces & place equal amounts of coconut & hot water in food processor or blender. Puree at high speed for a couple of minutes, let steep for 30 minutes. Then pour into a strainer set over a bowl.
Press on the pulp and squeeze by the handful to extract as milk as possible. Pour the milk through a fine mesh strainer. For dried coconut: use 1 cup p unsweetened, dried coconut with 1 1/2 cups hot tap water.
Allow to stand for 5 minutes. Puree one minute and proceed as above. Will keep up to three days refrigerated and indefinitely, if frozen. Blend all ingredients in a blender or food processor until smooth.

Homemade Eggrolls? experience, suggestions, recipes?
Im making this miso won ton vegetable soup for dinner tomorrow night and I want to make homemade eggrolls with it. Since there is no meat in the soup, I wanted to make meaty eggrolls. Like...sweet and sour chicken beef or pork...or something delicious like that.
NEVER cooked eggrolls before...any experienced advice?
OR any recipes for meat eggrolls that you know come out well?
DETAILS: Only cooking for two but leftovers are welcome, to fry I would just dip them in hot oil with a mesh strainer thingy....thats the only way I know how to do it.

Easy Egg Rolls
1 pkg. spring rolls wrappers or egg roll wrappers (25)
1 bag (16oz.) of presliced coleslaw
1 lb. ground pork
2 eggs
black pepper to taste
1 1/2 tsp. salt
1 large onion, chopped
1 egg white for sealing wrappers
Instructions
Combine all ingredients.
Place a portion of mixture diagonally along the center of egg roll wrapper. Fold top corner of the wrapper over the mixture, then fold both sides of the wrapper to the center. Moisten the edges with egg white. Next, roll the egg roll until the wrapper is complety wound. At this point, the egg roll can be gently formed into a 'log shape'. Seal with egg white.
Fry in a deep fat fryer or wok until golden brown.
