If You Can't Stand the Heat, Get a New Kitchen
If you are finding that your kitchen is overheating, or becoming filled with fumes, the first thing to check is the kitchen ventilation system.
All commercial kitchens now need to have the right ventilation – it is not just a recommendation, but a legal requirement. Not having the right ventilation is a major safety hazard, and not having one could lead to severe problems, or at best a large fine. So, should you not have one, it is time to get one, and should yours not be doing the job properly, it is definitely time to look into getting a new one. They not only improve the air quality (and remove any potentially fatal carbon monoxide in the process) and help maintain a comfortable temperature, but also help to eradicate many fire hazards at the same time.
Kitchens can be a volatile environment at the best of times, but having hot or uncomfortable working conditions is only going to exacerbate the matter, whilst being a potential major health hazard at the same time. Utilising new kitchen ventilation will make for a much better environment for all, helping morale and in turn the quality of service and most likely the quality of food.
Stainless steel catering equipment is almost always the best choice for any part of your kitchen set up, and ventilation is no different. It is much easier to keep clean and will be much more resilient, meaning it is not only a wise investment hygienically, but also one financially too.

How can I know if I have disconnected the power to the dishwasher?
I'm trying to replace my dishwasher, but when I turned off my circuit breaker switch to the kitchen (lights and ventilation fans), the dishwasher still fills with water. Does the dishwasher work like a washer where it fills with water but does not drain if there's no power?
If it is a plug obviously you can unplug it. If it is hard wired. I would check it for voltage with a volt/ohm meter for power before getting started. You can get a cheep one for about $10 - $15 and they come in handy if you are a do it your self 'er. If you still have power after throwing the breaker you think It's on then you will be able to figure it out with the meter
